For the Chocolate Shell:

  • 200g high-quality dark chocolate (70% cocoa or higher)

For the Pistachio Filling:

  • 1/2 cup shelled pistachios (unsalted)

  • 2 Medjool dates, pitted

  • 2 tablespoons white chocolate, melted

  • 1 tablespoon condensed milk or ghee (optional, for creaminess)

  • A few drops of rosewater or orange blossom water (optional)

Optional Toppings:

  • Crushed pistachios

  • Edible gold leaf

  • Drizzle of white chocolate


Instructions

  • Prepare the Filling:
    In a food processor, blend the pistachios and dates until a thick paste forms. Add melted white chocolate and rosewater or orange blossom water if using. Blend until smooth. Chill the mixture for 10 minutes.

  • Melt the Chocolate:
    Break the dark chocolate into pieces and melt it in a double boiler or microwave (heat in 20-second intervals, stirring each time until fully melted).

  • Coat the Mold:
    Pour a small amount of melted chocolate into silicone bar molds, using a spoon or brush to coat the sides evenly. Freeze for 5 minutes to set.

  • Fill the Bars:
    Add a spoonful of the pistachio-date mixture into the center of each mold. Leave space around the edges for sealing.

  • Seal the Bars:
    Cover the filling with more melted chocolate, ensuring the top is smooth and fully sealed. Tap the mold gently to remove air bubbles.

 

  • Chill and Decorate:
    Refrigerate for at least 30 minutes until the bars are firm. Once set, remove from the mold and garnish with crushed pistachios, a drizzle of white chocolate, and edible gold leaf if desired.

Notes

You can customize the filling with other ingredients like saffron, rose petals, or hazelnuts for variety.

Use silicone molds for easier shaping and removal.

Store in an airtight container in the fridge for up to 1 week.
